Fried Apricot Turnover recipeFried Apricot Turnovers
A Gabby favorite on the trail, this tasty recipe is from Ed Keenan,
Author of Nature and the Southwest.

Ingredients:
5 c dried apricots
4 c sugar
Pastry crust dough

Preparation:
Combine apricots and sugar
Cover with water
Cook down ‘till tender
Mash apricots with potato masher
Let cool

Prepare pastry dough
Cut into 5 x 8 squares
Place about ¼ c apricots in squares
Fold cornerwise into triangles
Moisten edges and seal crust together
Fry in greased skillet until golden brown
Serve warm to hot.
Change up with fried peaches.
